Prep veggies (onions mushrooms spinach red peppers) Sautéed in a little evoo. 2 eggs, whisked with a little water. Pam a pan. Cook eggs. Flip. Add veggie mix. Fold in half. Make enough veggies to keep in refrig so cuts down time.
Sauté diced onion in a little evoo. Add diced peppers, spinach & mushrooms. Whisk 2 eggs with a little water. Pam a pan. Make omelet. Flip. Add veggies, fold in half. I add a little crushed red pepper flakes when the veggies are cooking. Makes enough veggies for about 4 omelettes.
